  • Total Time: 1 hour 15 minutes
  • Yield: 12 servings

Ingredients

Scale

Apple Pie Filling

  • 2 ¾ cups apples diced in ½ inch cubes (3 medium apples)
  • 1 Tablespoon melted butter
  • ¼ cup light brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 Tablespoon fresh lemon juice
  • 1 ½ Tablespoon corn starch
  • ½ cup of water

Graham Cracker Crust

  • 2 ¼ cups graham cracker crumbs
  • ¼ cup light brown sugar
  • 1-2 teaspoons cinnamon (to taste)
  • 6 Tablespoons unsalted butter, melted and slightly cooled

Crisp Topping

  • ½ cup all-purpose flour
  • ½ cup light brown sugar
  • ½ cup quick-cooking oats
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ cup unsalted butter, melted

Cheesecake Filling

  • 12 oz. cream cheese
  • ½ cup of sugar
  • 1 ½ teaspoons vanilla
  • 2 Tablespoons flour
  • 1 large egg

For Serving

  • Salted caramel sauce, whipped cream, or vanilla ice cream

Instructions

  1. Make the apple pie filling: Peel the apples and dice them into about ½-inch cubes. In a large saucepan, melt 1 Tablespoon butter, then add the chopped apples, brown sugar, fresh lemon juice, corn starch, water, and spices.
  2. Stir everything well, cover with a lid, and cook over medium heat until the apples are slightly softened and the sauce has thickened. This will take about 10-15 minutes. Stir occasionally so the sauce does not stick to the bottom. Set aside and cool before using.
  3. Prepare the graham cracker crust: Preheat the oven to 350°F.
  4. In a bowl, stir together the graham cracker crumbs, cinnamon, and brown sugar. Add the melted butter and stir until everything is evenly moistened. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Bake for 8 minutes, then set aside to cool.
  5. Prepare the crisp topping: Stir together the flour, oats, brown sugar, and cinnamon. Add the melted butter and whisk with a fork to make the crumbs. Set aside.
  6. Make the cheesecake filling: Beat the softened cream cheese with the sugar, vanilla, and flour. Add the slightly beaten egg and mix just to combine. Spread the mixture in the prebaked crust.
  7. Spread the cooled apples over the cheesecake layer.
  8. Sprinkle with the crumb topping and bake for 35-40 minutes. If it starts browning too much, tent the top with aluminum foil.
  9. Cool completely before serving.
  10. Serve with a drizzle of salted caramel, vanilla ice cream, or whipped cream.
