These soft Chocolate Chip Butterscotch Cookies have chewy centers and crisp, golden edges. Semisweet chocolate chips, butterscotch chips, and pecans add sweet and nutty flavor, while flaky sea salt provides a salty finish.

  • Total Time: 25 minutes
  • Yield: 12 cookies

Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup semisweet chocolate chips
  • 1/2 cup butterscotch chips
  • 1/4 cup chopped pecans, optional
  • Flaky sea salt

Instructions

  1. Preheat your oven to 325°F.
  2. In a large mixing bowl or the bowl of a stand mixer, cream together the softened butter, brown sugar, and granulated sugar until light and creamy.
  3. Add the egg and vanilla to the cookie dough and beat until well combined.
  4. Add the flour, baking soda, and salt. Beat until just combined, taking care not to overmix.
  5. Use a wooden spoon or rubber spatula to mix in the chocolate chips, butterscotch chips, and pecans until evenly distributed.
  6. Scoop the dough onto an ungreased cookie sheet using a #24 cookie scoop, about 2 1/2 tablespoons per cookie.
  7. Bake for 12–15 minutes, or until the edges turn brown while the centers remain soft. Remove from the oven and sprinkle with flaky sea salt.
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Serve and enjoy!

Notes

  • Butter: Use unsalted butter to control the salt content. Bring it to room temperature, ideally between 68–72°F.
  • Brown sugar: Light brown sugar is recommended. Dark brown sugar can be used for a stronger molasses flavor.
  • Chocolate chips: Use both semisweet chocolate chips and butterscotch chips.
  • Pecans: The recipe uses 1/4 cup of pecans. For cookies with more nuts, increase the amount to 1/2 cup.
  • Measure the flour: Use the scoop-and-level method. Too much flour can make the cookies cakey.
  • Without butterscotch chips: You can omit them to make chocolate chip cookies with pecans. Increase the amounts of semisweet chocolate chips and pecans.
  • Round cookies: Immediately after baking, use a spoon to gently push the cookie edges into a round shape.
