Easy Apple Cheesecake Bars combine refrigerated crescent roll dough, a creamy vanilla cheesecake layer, cinnamon-spiced apples, and a buttery cinnamon-sugar topping. These cozy apple dessert bars are baked until golden, then cooled before slicing for an easy fall treat.

  • Total Time: 50 minutes
  • Yield: 16 bars

Ingredients

Scale
  • 1 tube (8oz.) refrigerated crescent rolls

For Cheesecake Layer

  • 8oz. cream cheese-softened at room temperature
  • ½ cup sugar
  • 1 teaspoon vanilla

For Apple Filling

  • 2 medium apples (Granny Smith or Golden Delicious) – peeled and chopped in small pieces
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 tablespoon cornstarch

For Topping

  • 3 Tablespoons melted butter
  • 7 Tablespoons sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat the oven to 375°F. Grease an 8 x 8 inch baking dish with non-stick spray and set aside.
  2. To make the cheesecake filling, beat together the cream cheese, ½ cup sugar, and vanilla extract until smooth and creamy. Set aside.
  3. To make the apple filling, stir together the diced apples, ¼ cup sugar, cinnamon, nutmeg, and cornstarch until evenly coated. Set aside.
  4. Unroll the crescent rolls and divide the dough into two halves. Place one half of the dough (4 crescents) in the bottom of the baking dish. Pinch the perforations together and stretch the dough to form the bottom crust.
  5. Spread the cheesecake filling evenly over the bottom crust.
  6. Drain any excess juice from the apple filling, then scatter the diced apples over the cheesecake filling.
  7. On a sheet of baking paper, spread the remaining dough, seal the perforations, and stretch it to create the top crust. Invert the crust over the apples.
  8. Pour the melted butter over the top crust and spread it evenly. Sprinkle with the cinnamon sugar.
  9. Bake for about 35 minutes. If the top starts to brown too quickly, tent it with aluminum foil.
  10. Cool completely before slicing and serving.
  11. Store leftovers in the refrigerator.

Notes

  • Granny Smith or Golden Delicious apples are suggested for the filling.
  • Drain excess juice from the apple mixture before adding it to the cheesecake layer.
  • Pinch the crescent dough perforations together to create the bottom and top crusts.
  • If the top browns too quickly during baking, cover it loosely with aluminum foil.
  • Cool completely before slicing, and store leftovers in the refrigerator.
