- 1 fresh pineapple peeled, cored, and cut into 8 spears
- ¼ cup light brown sugar
- ¼ teaspoon cayenne pepper
- 1 teaspoon vanilla extract
- ⅛ teaspoon kosher salt
- vegetable oil spray for the grill
Instructions
- Place pineapple in a bowl and toss with brown sugar, cayenne, vanilla, and salt.
- Cover and let marinate for 30 minutes (or overnight for stronger flavor).
- Preheat grill pan on high heat and lightly oil it.
- Grill pineapple 1–2 minutes per side until caramelized.
- Heat reserved marinade until syrupy.
- Drizzle syrup over grilled pineapple and serve.
