  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon

  • 1/2 tsp ginger
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 16 oz cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

Instructions

  1. Preheat oven to 350°F and line a 9×13 pan.
  2. Mix dry ingredients: flour, baking powder, baking soda, spices, and salt.
  3. Combine sugars, oil, eggs, and vanilla.
  4. Mix wet and dry ingredients, then fold in carrots, walnuts, and raisins.
  5. Beat cream cheese until smooth, then add sugar, eggs, vanilla, and sour cream.
  6. Spread most carrot batter into pan.
  7. Pour cheesecake layer over it.
  8. Add remaining carrot batter in spoonfuls.
  9. Swirl gently with a knife.
  10. Bake 40–50 minutes until set.
  11. Cool completely, then refrigerate 2–3 hours before slicing.

Notes

  • Use freshly grated carrots for best moisture.
  • Make sure cream cheese is fully softened.
  • Chill before slicing for clean bars.
