- 2 cups all-purpose flour
- 1 1/2 tsp baking powder

- 1 1/2 tsp cinnamon

- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 1 cup vegetable oil
- 4 large eggs
- 2 tsp vanilla extract
- 2 cups grated carrots
- 1/2 cup chopped walnuts
- 1/2 cup raisins
- 16 oz cream cheese
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/4 cup sour cream
Instructions
- Preheat oven to 350°F and line a 9×13 pan.
- Mix dry ingredients: flour, baking powder, baking soda, spices, and salt.
- Combine sugars, oil, eggs, and vanilla.
- Mix wet and dry ingredients, then fold in carrots, walnuts, and raisins.
- Beat cream cheese until smooth, then add sugar, eggs, vanilla, and sour cream.
- Spread most carrot batter into pan.
- Pour cheesecake layer over it.
- Add remaining carrot batter in spoonfuls.
- Swirl gently with a knife.
- Bake 40–50 minutes until set.
- Cool completely, then refrigerate 2–3 hours before slicing.
Notes
- Use freshly grated carrots for best moisture.
- Make sure cream cheese is fully softened.
- Chill before slicing for clean bars.
