- 2 cups all-purpose flour (+1 tbsp)
- 1/2 tsp salt
- 2 tsp baking powder
- 2 large eggs
- 1/4 cup salted butter, melted and cooled
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 3/4 cup milk
- 21 oz cherry pie filling (divided)
- 1/4 cup salted butter (cold, cubed)
- 1/2 cup flour (streusel)
- 1 tsp baking powder (streusel)
- 1/4 cup sugar (streusel)
- 1/4 tsp cinnamon
- 1 tbsp milk or heavy cream
Instructions
- Preheat oven to 375°F (190°C) and line muffin pan.
- Mix flour, salt, and baking powder; set aside.
- Whisk eggs, butter, sugar, vanilla, and milk.
- Combine wet and dry ingredients gently.
- Rinse half the cherries and toss in flour.
- Fold cherries into batter.
- Fill muffin cups.
- Add extra cherries on top.
- Make streusel and sprinkle over muffins.
- Bake 22–25 minutes until done.
- Cool 10 minutes before removing.
Notes
- Do not overmix batter.
- Drain cherries well to avoid soggy muffins.
- Coat cherries in flour to prevent sinking.
- Cool outside pan to prevent overbaking.
