  • 2 large eggs
  • 1/4 cup salted butter, melted and cooled
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 3/4 cup milk
  • 21 oz cherry pie filling (divided)
  • 1/4 cup salted butter (cold, cubed)
  • 1/2 cup flour (streusel)
  • 1 tsp baking powder (streusel)
  • 1/4 cup sugar (streusel)
  • 1/4 tsp cinnamon
  • 1 tbsp milk or heavy cream

Instructions

  1. Preheat oven to 375°F (190°C) and line muffin pan.
  2. Mix flour, salt, and baking powder; set aside.
  3. Whisk eggs, butter, sugar, vanilla, and milk.
  4. Combine wet and dry ingredients gently.
  5. Rinse half the cherries and toss in flour.
  6. Fold cherries into batter.
  7. Fill muffin cups.
  8. Add extra cherries on top.
  9. Make streusel and sprinkle over muffins.
  10. Bake 22–25 minutes until done.
  11. Cool 10 minutes before removing.

Notes

  • Do not overmix batter.
  • Drain cherries well to avoid soggy muffins.
  • Coat cherries in flour to prevent sinking.
  • Cool outside pan to prevent overbaking.
