- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/3 cup milk
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract (filling)
- 1/2 cup granulated sugar (coating)
- 1 tsp ground cinnamon
- 3 tbsp melted butter
Instructions
- Beat cream cheese, powdered sugar, and vanilla until smooth; chill filling.
- Whisk flour, baking powder, and salt.
- Cream butter and sugar, then add egg and vanilla.
- Alternate adding dry ingredients and milk to form dough.
- Preheat oven to 350°F (175°C).
- Flatten dough, add cheesecake filling, and seal with more dough.
- Bake 10–12 minutes until lightly golden.
- Mix cinnamon and sugar, brush cookies with butter, and coat in mixture.
- Cool before serving.
Notes
- Chill filling to prevent leaking during baking.
- Seal edges well to keep cheesecake center intact.
- Best served fresh but can be stored airtight for 2–3 days.
