- 1 cup all-purpose flour
- 1/4 cup powdered sugar (plus extra for dusting)
- 1/2 cup butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- Fresh strawberries, sliced
Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- Mix flour and powdered sugar, then cut in butter until crumbly. Press into pan.
- Bake crust for 15 minutes until lightly golden.
- Whisk sugar and eggs, then add lemon juice and zest.
- Pour mixture over crust and bake for 20 minutes until set.
- Cool completely.
- Top with sliced strawberries and dust with powdered sugar.
- Slice into bars and serve.
