- 2½ cups all-purpose flour
- 1 tsp baking soda
- 1½ tsp baking powder
- 1 tsp salt
- 1 tsp cinnamon
- ¾ tsp nutmeg
- ¼ tsp cloves (optional)
- ½ cup applesauce
- ½ cup vegetable oil
- 1½ cups granulated sugar
- ½ cup brown sugar
- 3 eggs
- 1¼ cups mashed banana
- 8 oz crushed pineapple (with juice)
- 1½ tsp vanilla extract
- 1¼ cups toasted pecans
Instructions
- Preheat oven to 350°F. Prepare and line three 8-inch cake pans.
- Whisk dry ingredients together in a bowl.
- Mix applesauce, oil, sugars, and eggs in another bowl. Add banana, pineapple, and vanilla.
- Combine wet and dry ingredients until just mixed. Fold in pecans.
- Divide batter evenly into pans and bake 25–30 minutes.
- Cool completely on a wire rack.
- For frosting, beat cream cheese and butter until fluffy.
- Add powdered sugar gradually, then vanilla, until smooth and fluffy.
- Layer and frost cake, then chill before serving.
Notes
- Cake improves in flavor after resting overnight.
- Store refrigerated up to 5 days.
- Unfrosted layers can be frozen up to 2 months.
