Instructions

  1. Preheat oven to 350°F. Prepare and line three 8-inch cake pans.
  2. Whisk dry ingredients together in a bowl.
  3. Mix applesauce, oil, sugars, and eggs in another bowl. Add banana, pineapple, and vanilla.
  4. Combine wet and dry ingredients until just mixed. Fold in pecans.
  5. Divide batter evenly into pans and bake 25–30 minutes.
  6. Cool completely on a wire rack.
  7. For frosting, beat cream cheese and butter until fluffy.
  8. Add powdered sugar gradually, then vanilla, until smooth and fluffy.
