- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup granulated sugar
- 1 tbsp dried culinary lavender
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup powdered sugar (glaze, optional)
- 2 tbsp fresh lemon juice (glaze, optional)
- 1 tsp lemon zest (optional garnish)
Instructions
- Grind lavender with sugar until fragrant.
- Cream butter and lavender sugar until fluffy.
- Add lemon zest, juice, and vanilla.
- Mix flour, baking powder, and salt separately.
- Combine dry and wet ingredients into dough.
- Chill dough 15–20 minutes.
- Preheat oven to 350°F (175°C).
- Shape dough into cookies and place on baking sheet.
- Bake 10–12 minutes until lightly golden.
- Cool completely.
- Optional: mix glaze ingredients and drizzle over cookies.
Notes
- Do not overbake to keep cookies soft.
- Use culinary-grade lavender only.
- Chilling dough improves texture and flavor.
