- 1/4 cup flour
- 2 tsp cornstarch
- 2 tbsp lemon zest
- 1 cup sugar
- 5 tbsp butter
- 1/2 cup lemon juice
- 5 eggs separated
- 1 1/4 cups milk
- Boiling water (for bath)
Instructions
- Preheat oven to 325°F and prepare ramekins.
- Mix flour and cornstarch.
- Make lemon sugar with zest and sugar.
- Cream butter, sugar, and egg yolks.
- Add dry ingredients, milk, and lemon juice.
- Whip egg whites and fold into batter.
- Pour into ramekins and bake in water bath.
- Cool before serving.

- Bake in water bath for best texture.
- Do not overmix egg whites.
