- 1 1/2 cups quick oats
- 1 1/2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1 cup butter, melted
- 1 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 2 1/2 cups mixed berries (fresh or thawed frozen)
- Juice of 1/2 lemon
- 1 tsp cornstarch
- 3 tbsp sugar (adjust to taste)
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
- Mix berries, lemon juice, sugar, and cornstarch in a bowl and set aside.
- In another bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking powder.
- Add melted butter and vanilla and mix until crumbly.
- Press 2/3 of the mixture into the prepared pan.
- Spread berry mixture evenly on top.
- Sprinkle remaining oat mixture over berries.
- Bake for 28–32 minutes until bubbly and golden on top.
- Cool completely before cutting into bars.
Notes
- Adjust sugar depending on berry sweetness.
- Chill before cutting for cleaner slices.
- Serve warm, chilled, or with ice cream or whipped cream.
- Bars hold together best after cooling fully.
