  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar, packed
  • 1 cup butter, melted
  • 1 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 1/2 cups mixed berries (fresh or thawed frozen)
  • Juice of 1/2 lemon
  • 1 tsp cornstarch
  • 3 tbsp sugar (adjust to taste)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch pan with parchment paper.
  2. Mix berries, lemon juice, sugar, and cornstarch in a bowl and set aside.
  3. In another bowl, combine oats, flour, brown sugar, cinnamon, salt, and baking powder.
  4. Add melted butter and vanilla and mix until crumbly.
  5. Press 2/3 of the mixture into the prepared pan.
  6. Spread berry mixture evenly on top.
  7. Sprinkle remaining oat mixture over berries.
  8. Bake for 28–32 minutes until bubbly and golden on top.
  9. Cool completely before cutting into bars.
