Ingredients

- 1 1/2 cups flour
- 1 cup oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Salt
- 1/2 cup brown sugar
- 3/4 cup peanut butter
- 2 eggs
- 1 tsp vanilla
- 1/2 cup avocado oil
- 2 tbsp Greek yogurt
- 1 cup milk
- 1/2 cup strawberry jam
Instructions
- Preheat oven to 350°F and line muffin tin.
- Mix dry ingredients in one bowl.
- Mix wet ingredients in another bowl.
- Combine wet and dry mixtures.
- Fill muffin cups 3/4 full.
- Add jam swirl on top and mix lightly.
- Bake 20 minutes until golden.
- Cool and top with peanuts and oats.
Notes
- Do not overmix batter.
- Swirl jam gently for texture.
