Soft oatmeal peanut butter muffins swirled with strawberry jam, topped with peanuts and oats for a sweet and nutty breakfast treat.

Ingredients

  • 1 1/2 cups flour
  • 1 cup oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Salt
  • 1/2 cup brown sugar
  • 3/4 cup peanut butter
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup avocado oil
  • 2 tbsp Greek yogurt
  • 1 cup milk
  • 1/2 cup strawberry jam

Instructions

  1. Preheat oven to 350°F and line muffin tin.
  2. Mix dry ingredients in one bowl.
  3. Mix wet ingredients in another bowl.
  4. Combine wet and dry mixtures.
  5. Fill muffin cups 3/4 full.
  6. Add jam swirl on top and mix lightly.
  7. Bake 20 minutes until golden.
  8. Cool and top with peanuts and oats.
