- 1 cup graham cracker crumbs
- 1/2 cup butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups fresh peaches, diced
- 1/4 cup sugar (for peaches)
- 1 tbsp lemon juice
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch pan.
- Mix graham cracker crumbs and melted butter, then press into pan.
- Beat cream cheese and sugar until smooth, then add eggs one at a time and vanilla.
- Pour cheesecake mixture over crust.
- Toss peaches with sugar, lemon juice, and cinnamon, then spread over filling.
- Bake for 30–35 minutes until edges are set and center slightly jiggles.
- Cool completely, then refrigerate for at least 2 hours.
- Slice into bars and serve chilled.
Notes
- Use ripe peaches for best sweetness and flavor.
- Can be stored in the fridge up to 4 days.
- Gluten-free crumbs can be used for crust.
