Pecan Pie Cobbler is a rich, gooey dessert that combines the caramel-like filling of pecan pie with a soft, buttery cobbler topping for a warm and comforting treat.

  • Total Time: 0 hours

Ingredients

Scale
  • 1 ½ cups pecans (chopped or whole)
  • 1 cup corn syrup
  • 1 cup brown sugar
  • 2 large eggs
  • 2 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 pie crust (store-bought or homemade: flour, butter, salt, water)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ cup granulated sugar
  • ½ cup milk
  • ½ cup butter (melted, for cobbler topping)
  • Optional: chocolate chips, cinnamon, nutmeg

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare or roll out pie crust and place into baking dish.
  3. In a bowl, whisk corn syrup, brown sugar, eggs, melted butter, and vanilla until smooth.
  4. Stir in pecans and pour mixture over crust.
  5. In another bowl, mix flour, baking powder, sugar, milk, and melted butter to form batter.
  6. Spoon cobbler batter over pecan filling (do not fully mix).
  7. Bake for 45–50 minutes until golden and set.
  8. Cool at least 30 minutes before serving.

Notes

  • Do not overmix filling to keep texture gooey.
  • Let cobbler cool before slicing so it sets properly.
  • Use foil on edges if browning too fast.
  • Optional chocolate chips or spices can enhance flavor.
