- 1 ½ cups pecans (chopped or whole)
- 1 cup corn syrup
- 1 cup brown sugar
- 2 large eggs
- 2 tbsp unsalted butter (melted)
- 1 tsp vanilla extract
- 1 pie crust (store-bought or homemade: flour, butter, salt, water)
- 1 cup all-purpose flour
- 1 tsp baking powder
- ½ cup granulated sugar
- ½ cup milk
- ½ cup butter (melted, for cobbler topping)
- Optional: chocolate chips, cinnamon, nutmeg
Instructions
- Preheat oven to 350°F (175°C).
- Prepare or roll out pie crust and place into baking dish.
- In a bowl, whisk corn syrup, brown sugar, eggs, melted butter, and vanilla until smooth.
- Stir in pecans and pour mixture over crust.
- In another bowl, mix flour, baking powder, sugar, milk, and melted butter to form batter.
- Spoon cobbler batter over pecan filling (do not fully mix).
- Bake for 45–50 minutes until golden and set.
- Cool at least 30 minutes before serving.
Notes
- Do not overmix filling to keep texture gooey.
- Let cobbler cool before slicing so it sets properly.
- Use foil on edges if browning too fast.
- Optional chocolate chips or spices can enhance flavor.
