- 1 cup cottage cheese
- 1 ripe banana

- 1 teaspoon baking powder

- 1/4 teaspoon salt
- 3/4 cup chopped strawberries
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet.
- Mash banana in a large bowl.
- Mix in cottage cheese, eggs, honey, vanilla, lemon zest, and lemon juice.
- Combine oats, flour, baking powder, cinnamon, and salt in a separate bowl.
- Stir dry ingredients into wet mixture.
- Fold in chopped strawberries.
- Scoop dough onto baking sheet and flatten slightly.
- Bake 14–18 minutes until set and lightly golden.
- Cool before serving.
Notes
- Use very ripe banana for best sweetness.
- Chop strawberries small for better structure.
- Blend cottage cheese for smoother texture if desired.
- Do not overbake to keep cookies soft.
