  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3/4 cup chopped strawberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet.
  2. Mash banana in a large bowl.
  3. Mix in cottage cheese, eggs, honey, vanilla, lemon zest, and lemon juice.
  4. Combine oats, flour, baking powder, cinnamon, and salt in a separate bowl.
  5. Stir dry ingredients into wet mixture.
  6. Fold in chopped strawberries.
  7. Scoop dough onto baking sheet and flatten slightly.
  8. Bake 14–18 minutes until set and lightly golden.
  9. Cool before serving.
