Torrijas are a traditional Spanish treat similar to French toast, made with thick slices of bread soaked in vanilla-infused milk, dipped in egg, and fried until golden. Often enjoyed during Semana Santa (Holy Week), they’re sweet, comforting, and incredibly simple to prepare.

  • Total Time: 10 minutes
  • Yield: 15 pieces

Ingredients

Scale
  • 1 loaf stale French bread, sliced into 1.5 inch thick slices (about 1215 slices)
  • 1 1/2 cups warm milk
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • Oil for frying (canola or vegetable)
  • 2 Tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  1. In a shallow bowl, mix warm milk with vanilla extract.
  2. In a separate bowl, beat the eggs until smooth.
  3. Mix sugar and cinnamon in a small dish and set aside.
  4. Heat oil in a skillet over medium heat.
  5. Dip bread slices in milk, allowing them to soak, then dip into beaten eggs.
  6. Fry slices in hot oil for a few minutes per side until golden brown.
  7. Remove and drain on paper towels or a wire rack.
  8. Sprinkle with cinnamon sugar or drizzle with honey.
  9. Serve warm or chilled.

Notes

  • Best made with stale bread like baguette, brioche, or challah.
  • Allow bread to dry out for better absorption.
  • Traditionally served with cinnamon sugar, honey, or syrup.
