  • Yield: 1 8x4-inch loaf

Ingredients

Scale

For the Bread

  • 2 cups gluten-free all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • â…” cup granulated sweetener or preferred granulated sugar
  • ½ cup melted vegan butter or neutral-flavored oil
  • 2 flax eggs (2 tablespoons milled flaxseed mixed with 6 tablespoons water)
  • ¼ cup unsweetened non-dairy milk
  • 1 teaspoon pure vanilla extract or maple extract

For the Apples

  • 2 cups peeled and chopped apples (2–3 small apples)
  • 2 tablespoons granulated sweetener or preferred granulated sugar
  • 1 teaspoon cinnamon

For the Brown Sugar Layer

  • â…“ cup brown sugar sweetener or preferred light or dark brown sugar
  • 1 teaspoon cinnamon

For the Glaze

  • ½ cup powdered sugar sweetener or preferred powdered sugar
  • 1–2 tablespoons water or non-dairy milk, depending on desired thickness

Instructions

  1. Preheat the oven to 350°F.
  2. In a large mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt.
  3. In a small bowl, melt the vegan butter. Add the granulated sweetener, flax eggs, and vanilla. Mix well to combine and cream the ingredients together.
  4. Add the wet ingredients to the bowl of dry ingredients and mix together.
  5. Add the non-dairy milk and mix until the batter is smooth.
  6. In a small bowl, combine the brown sugar and cinnamon. Set aside.
  7. Peel, core, and chop the apples into small pieces. Place them in a bowl and toss with the granulated sweetener and cinnamon.
  8. Line an 8×4-inch loaf pan with parchment paper. Pour half the bread batter evenly into the pan. Add half the apple mixture over the batter, followed by half the brown sugar mixture. Repeat the layers with the remaining batter, apples, and brown sugar.
  9. Bake for about 60 minutes, or until a toothpick or cake tester inserted into the center comes out mostly clean.
  10. Remove the loaf from the oven and let it rest in the pan for 10–15 minutes while you prepare the glaze.
  11. In a small bowl, mix the powdered sugar with the water until the glaze is drippy but thick.
  12. Remove the loaf from the pan and parchment paper. Let it cool on a wire rack before drizzling with the glaze.

Notes

  • Apples: Recommended varieties include Gala, Fuji, Braeburn, Envy, Pink Lady, and Honeycrisp.
  • Make ahead: Cool the bread completely before storing it unsliced in an airtight container. Keep it at room temperature for 3–4 days or in the refrigerator for 5–7 days. Place a paper towel in the container to help prevent excess moisture from accumulating on the loaf.
  • Leftovers: Store the unsliced portion in an airtight container for 3–4 days at room temperature or 5–7 days in the refrigerator.
  • Freezing: Freeze the loaf whole or sliced. Wrap it in plastic wrap, then foil, and place it in a freezer-safe storage bag for 6–8 months.
  • Thawing: Thaw overnight in the refrigerator before unwrapping and bringing to room temperature. Enjoy at room temperature or warm in the oven or microwave.
