No reviews

These healthy no-bake chocolate peanut butter cookies are made with 8 nutritious ingredients, including creamy peanut butter, cocoa powder, oats, and coconut. They are gluten-free, dairy-free, vegan with maple syrup, and refined sugar-free.

  • Total Time: 30 minutes
  • Yield: 18 cookies

Ingredients

Scale
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey (or maple syrup)
  • 1/4 cup coconut oil (or butter)
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 1 cup quick cooking oats
  • 1/4 cup unsweetened shredded coconut

Instructions

  1. Line a cookie sheet with waxed paper and set aside.
  2. Combine the peanut butter, honey, salt, and coconut oil in a saucepan. Cook over medium heat, stirring continuously, until the ingredients are melted and the mixture is smooth.
  3. Stir in the vanilla extract and cocoa powder.
  4. Add the quick-cooking oats and shredded coconut. Stir until combined.
  5. Continue cooking over medium heat until the mixture is slightly thickened, about 1–3 minutes.
  6. Drop 1-tablespoon portions of the mixture onto the prepared baking sheet. Continue until all the cookie mixture has been used.
  7. Let the cookies cool in the refrigerator or freezer until hardened.
  8. Serve cold or at room temperature.
  9. Store in an airtight container in the refrigerator.

Notes

Serving note: These cookies are best served cold because coconut oil becomes soft at warm temperatures.

Ingredient Substitutions

  • Peanut butter: Creamy peanut butter is best, but crunchy peanut butter also works. You can use almond butter, cashew butter, or sunflower seed butter if you have a nut allergy.
  • Coconut oil: Butter or ghee can be used instead of coconut oil. However, the cookies will no longer be dairy-free if you use butter.
  • Honey: Honey naturally sweetens these cookies. Use pure maple syrup to make them vegan.
  • Shredded coconut: If you don’t care for coconut, replace it with an additional 1/4 cup quick-cooking oats.
  • Cocoa powder: Use unsweetened cocoa powder. Regular or dark cocoa powder both work for a richer chocolate flavor.
  • Quick-cooking oats: Quick-cooking oats give these cookies the best texture. For a gluten-free recipe, choose certified gluten-free oats. If using old-fashioned oats, pulse them in a blender or food processor 1 or 2 times before using.

Store or Freeze

Store the cookies in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months.
