Instructions

  1. Preheat oven to 350°F and prepare an 8×8 baking dish.
  2. Blend graham crackers and sugar into fine crumbs.
  3. Mix in melted butter until crumbly.
  4. Press mixture into baking dish and bake 8–10 minutes.
  5. Cool crust completely.
  6. Beat cream cheese until smooth.
  7. Add powdered sugar, pineapple, and vanilla.
  8. Spread cream cheese layer over crust.
  9. Fold remaining pineapple into Cool Whip.
  10. Spread whipped topping layer gently over cream cheese mixture.
  11. Garnish with graham cracker crumbs.
  12. Chill at least 8 hours before serving.
