- 12 full-sheet graham crackers
- 7 tbsp unsalted butter, melted
- 2 tbsp granulated sugar
- 8 oz cream cheese
- 1 cup powdered sugar
- 20 oz crushed pineapple, drained
- 1/2 tsp vanilla extract
- 8 oz Cool Whip
- Extra graham cracker crumbs for garnish
Instructions
- Preheat oven to 350°F and prepare an 8×8 baking dish.
- Blend graham crackers and sugar into fine crumbs.
- Mix in melted butter until crumbly.
- Press mixture into baking dish and bake 8–10 minutes.
- Cool crust completely.
- Beat cream cheese until smooth.
- Add powdered sugar, pineapple, and vanilla.
- Spread cream cheese layer over crust.
- Fold remaining pineapple into Cool Whip.
- Spread whipped topping layer gently over cream cheese mixture.
- Garnish with graham cracker crumbs.
- Chill at least 8 hours before serving.
Notes
- Overnight chilling gives the cleanest slices.
- Drain pineapple thoroughly to avoid watery filling.
- Full-fat cream cheese provides best texture.
