For the cheesecake layer:
- 16 ounces cream cheese, softened (2 blocks)
- 2 cups confectioners’ sugar
- 1 cup whipped topping (Cool Whip)
For the pumpkin layer:
- 15 ounces pumpkin puree (1 can; not pumpkin pie filling)
- 2 teaspoons pumpkin spice
- 4 ounces instant vanilla pudding (1 box)
- ½ cup Cool Whip
- 1 ¼ cups half-and-half
For the final layer:
- 8 ounces Cool Whip
- Chopped pecans, for topping
Instructions
- Preheat the oven to 350°F. Spray a 9 x 13-inch pan with cooking spray and set aside.
- Make the crust. Pulse graham crackers in a food processor until they form fine crumbs.
- In a medium-sized mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter.
- Spread the graham cracker mixture over the bottom of the prepared pan. Press it down with the bottom of a glass to form an even crust.
- Bake the crust for 5–7 minutes. Remove it from the oven and let it cool.
- While the crust bakes, prepare the cheesecake layer. In a stand mixer, mix the softened cream cheese and confectioners’ sugar until combined.
- Gently mix in 1 cup of whipped topping.
- Carefully spread the cheesecake mixture over the cooled crust. Place the pan in the refrigerator while preparing the pumpkin layer.
- In a medium-sized mixing bowl, combine the half-and-half and instant vanilla pudding. Mix until the mixture thickens.
- Add the pumpkin puree and pumpkin spice. Mix until combined.
- Gently fold in ½ cup of Cool Whip.
- Spread the pumpkin mixture over the cheesecake layer.
- Spread 8 ounces of Cool Whip over the pumpkin layer and sprinkle with chopped pecans.
- Refrigerate for 1–2 hours before serving.
Notes
- Use plain pumpkin puree, not pumpkin pie filling.
- Allow the crust to cool before spreading the cheesecake layer over it.
- Refrigerate the dessert for 1–2 hours before serving so the layers can chill and set.
